Description
Tender chicken in a rich, velvety garlic mushroom sauce. This one-pan wonder is quick, easy, and too good not to share for a comforting weeknight dinner.

- 4 chicken breasts (approx. 700g-900g / 1.5–2 lbs)
- 8 oz (225g) mushrooms, sliced
- 2 tbsp (30ml) olive oil
- 2 cloves garlic, minced
- 1 cup (240ml) heavy cream
- 1/2 cup (120ml) chicken broth
- 1/2 cup (50g) parmesan cheese, grated
- 1 tsp dried thyme
- Salt and freshly ground black pepper, to taste
Instructions
- Pat chicken breasts dry and season generously with salt, black pepper, and dried thyme.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown; remove and set aside.
- Add sliced mushrooms to the same pan and sauté for 5-7 minutes until soft and golden brown.
- Stir in minced garlic and cook for 1 minute until fragrant. Pour in chicken broth and heavy cream, bringing to a gentle simmer for 5 minutes to thicken.
- Return chicken to the pan, nestling it into the sauce. Cook for another 5-8 minutes until chicken is cooked through and sauce has thickened. Add a splash of broth if needed.
- Remove from heat and stir in grated parmesan cheese until melted and smooth. Taste and adjust seasoning as necessary.

- This dish pairs well with rice or pasta.
- Leftovers can be stored in the fridge for up to 3 days.
