Description

Tender chicken in a rich, velvety garlic mushroom sauce. This one-pan wonder is quick, easy, and too good not to share for a comforting weeknight dinner.


Ingredients

  • 4 chicken breasts (approx. 700g-900g / 1.52 lbs)
  • 8 oz (225g) mushrooms, sliced
  • 2 tbsp (30ml) olive oil
  • 2 cloves garlic, minced
  • 1 cup (240ml) heavy cream
  • 1/2 cup (120ml) chicken broth
  • 1/2 cup (50g) parmesan cheese, grated
  • 1 tsp dried thyme
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Pat chicken breasts dry and season generously with salt, black pepper, and dried thyme.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown; remove and set aside.
  3. Add sliced mushrooms to the same pan and sauté for 5-7 minutes until soft and golden brown.
  4. Stir in minced garlic and cook for 1 minute until fragrant. Pour in chicken broth and heavy cream, bringing to a gentle simmer for 5 minutes to thicken.
  5. Return chicken to the pan, nestling it into the sauce. Cook for another 5-8 minutes until chicken is cooked through and sauce has thickened. Add a splash of broth if needed.
  6. Remove from heat and stir in grated parmesan cheese until melted and smooth. Taste and adjust seasoning as necessary.
