Description

A delicious one-pan dish that merges perfectly cooked chicken, fluffy rice, and vibrant Mediterranean spices for an easy weeknight dinner.


Ingredients

  • 2 chicken breasts (sliced into 4 pieces)
  • 1 cup rice (rinsed and soaked in water for 30 minutes)
  • 1 onion (finely chopped)
  • 1 tsp garlic (finely chopped)
  • 1/2 cup frozen peas
  • 2 and 1/4 cups chicken broth (low sodium preferred)
  • 1 bay leaf
  • 1-inch cinnamon stick
  • 1/2 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp ground black pepper
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp paprika
  • 1/2 tsp turmeric powder
  • 2 tsp lemon juice
  • 2 tsp olive oil (plus more for drizzling)

Instructions

  1. Slice chicken breasts and finely chop the onion and garlic. Soak the rice for 30 minutes.
  2. In a large pan over medium-high heat, add olive oil and sear chicken pieces for about 5 minutes on each side until golden brown. Remove and set aside.
  3. Add chopped onion and garlic to the same pan and sauté for 3-4 minutes until softened.
  4. Add thyme, oregano, black pepper, cumin, garlic powder, salt, paprika, turmeric, and the cinnamon stick. Stir for 1 minute to bloom the spices.
  5. Add drained rice, chicken broth, bay leaf, and seared chicken pieces back into the pan. Stir well.
  6. Bring to a gentle boil, then reduce the heat to low. Cover and cook for 20-25 minutes.
  7. When rice is cooked, add frozen peas and drizzle with more lemon juice. Fluff with a fork and adjust seasoning as necessary.
  8. Serve garnished with fresh parsley if desired.
