  • 6 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 3 carrots, peeled and cut into chunks
  • 3 potatoes, peeled and cubed
  • 1½ cups chicken broth or Irish stout
  • 1 tablespoon tomato paste
  • 1 teaspoon fresh thyme (or ½ teaspoon dried)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 bay leaf
  • 2 tablespoons chopped parsley (for garnish)

Instructions

  1. Pat the chicken thighs dry and season both sides with salt and pepper. Heat olive oil in a large pot or Dutch oven over medium-high heat. Sear the chicken skin-side down for 5 to 6 minutes until golden brown and crispy. Flip and cook the other side for 3 to 4 minutes. Remove the chicken from the pot and set it aside.
  2. In the same pot, add the chopped onion and cook until softened and lightly golden, about 4 minutes. Stir in the minced garlic and tomato paste, and cook for 1 minute until fragrant.
  3. Add the carrots and potatoes to the pot and stir to coat them with the aromatics. Pour in the chicken broth or Irish stout, scraping the bottom of the pot to loosen any browned bits. Add the thyme, bay leaf, and nestle the seared chicken thighs back into the pot, skin-side up.
  4. Bring the mixture to a gentle simmer over medium heat. Then, reduce the heat to low, cover the pot with a lid, and let it cook for 35 to 40 minutes, or until the chicken is fully cooked and the vegetables are fork-tender.
  5. For the last 10 minutes of cooking, remove the lid to allow the sauce to reduce and thicken slightly. Discard the bay leaf before serving.
  6. Sprinkle the One Pot Irish Chicken with chopped fresh parsley and serve hot. It pairs wonderfully with crusty bread or mashed potatoes.

  • For a thicker sauce, mash a few of the potatoes into the broth before serving.
  • Boneless chicken thighs or breasts can be used, but they may require a shorter cooking time.
