Instructions
- Preheat your oven to 400°F (200°C).
- Peel 2-3 medium sweet potatoes and cut them into uniform 1-inch cubes.
- Drizzle with olive oil, garlic powder, rosemary, salt, and pepper; toss to coat.
- Transfer to a baking sheet, spread in a single layer.
- Roast for about 25-30 minutes, stirring halfway through.
- Once tender, cool for 5 minutes and sprinkle with parmesan before serving.
