A cozy and flavorful dish combining tender, juicy meatballs seared in garlic butter with creamy, cheesy linguine. This Parmesan linguine garlic butter recipe is easy enough for weeknights but delicious enough for company.

- 12 oz linguine
- 1 tablespoon olive oil
- 1 pound ground beef or a beef-pork blend
- ½ cup grated Parmesan cheese
- ¼ cup breadcrumbs
- 1 egg
- 2 garlic cloves, minced
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- 3 tablespoons butter
- 3 additional garlic cloves, minced
- ½ cup pasta water (reserved from cooking)
- ½ cup grated Parmesan cheese (for sauce)
- Fresh parsley, chopped (optional)
Instructions
- Cook linguine in salted boiling water according to package directions until al dente. Reserve ½ cup of pasta water before draining and set the pasta aside.
- In a large bowl, combine ground meat, ½ cup Parmesan, breadcrumbs, egg, 2 cloves of minced garlic, Italian seasoning, salt, and pepper. Mix just until combined. Form into small meatballs.
- Heat olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides and fully cooked through, about 8 to 10 minutes. Remove from skillet and set aside.
- In the same skillet, melt the butter over medium heat. Add the remaining 3 cloves of minced garlic and sauté for about 1 minute until fragrant.
- Add the drained linguine to the skillet along with the reserved pasta water. Toss to coat and stir in ½ cup Parmesan until melted and creamy.
- Return the meatballs to the skillet and spoon the garlic butter sauce over them. Cook together for 1 to 2 minutes to blend the flavors.
- Serve hot, topped with extra Parmesan and parsley if desired.
Notes
- Use freshly grated Parmesan for the best melt and flavor.
- You can make the meatballs ahead and store them in the fridge or freezer.
- For a twist, add a splash of cream to the garlic butter sauce or toss in spinach right before serving.
- This dish pairs well with a crisp green salad or roasted vegetables.
