Description
A comforting and flavorful dish featuring tender meatballs seared in garlic butter, tossed with creamy, cheesy linguine. This Parmesan linguine with garlic butter sauce is easy enough for a weeknight but special enough for guests.

- 12 oz linguine
- 1 tablespoon olive oil
- 1 pound ground beef or a beef-pork blend
- ½ cup grated Parmesan cheese (for meatballs)
- ¼ cup breadcrumbs
- 1 egg
- 2 garlic cloves, minced (for meatballs)
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- 3 tablespoons butter
- 3 additional garlic cloves, minced (for sauce)
- ½ cup reserved pasta water
- ½ cup grated Parmesan cheese (for sauce)
- Fresh parsley, chopped (optional)
Instructions
- Cook linguine in salted boiling water according to package directions until al dente. Reserve ½ cup of pasta water before draining and set the pasta aside.
- In a large bowl, combine ground meat, ½ cup Parmesan, breadcrumbs, egg, 2 cloves of minced garlic, Italian seasoning, salt, and pepper. Mix just until combined. Form into small meatballs.
- Heat olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides and fully cooked through, about 8 to 10 minutes. Remove from skillet and set aside.
- In the same skillet, melt the butter over medium heat. Add the remaining 3 cloves of minced garlic and sauté for about 1 minute until fragrant.
- Add the drained linguine to the skillet along with the reserved pasta water. Toss to coat and stir in ½ cup Parmesan until melted and creamy, creating a garlic butter linguine sauce.
- Return the meatballs to the skillet and spoon the garlic butter sauce over them. Cook together for 1 to 2 minutes to blend the flavors.
- Serve hot, topped with extra Parmesan and parsley if desired.
Notes
- Use freshly grated Parmesan for the best melt and flavor in your garlic butter linguine.
- Meatballs can be made ahead and stored in the fridge or freezer.
- For a richer sauce, add a splash of cream to the garlic butter linguine.
- Toss in spinach right before serving the Parmesan linguine.
