Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy, about 2 minutes. Add the egg and vanilla extract, mixing until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients while mixing on low speed until combined. Add the milk and mix until completely combined.
- Divide the dough into five equal portions and tint each with different pastel colors using gel food coloring. Knead until evenly distributed.
- Scoop about 1 tablespoon of dough for each cookie and roll into a ball. Place on the prepared baking sheet about 2 inches apart. Bake for 8-10 minutes until the edges are set and tops look slightly cracked. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- For the vanilla filling, beat the softened butter until smooth. Gradually add powdered sugar and mix until well combined. Mix in heavy cream (or milk), vanilla extract, and a pinch of salt until fluffy and spreadable.
- Once cookies are cool, match pairs by size. Spread a generous amount of filling onto the flat side of one cookie and top with another cookie, gently pressing to spread the filling evenly.
- Let the assembled sandwiches sit for about 10 minutes to firm up before serving.
