Ingredients

  • 4 slices sourdough bread
  • 1/2 cup (120g) basil pesto
  • 2 cups (200g) shredded mozzarella cheese
  • 2 tablespoons (28g) unsalted butter

Instructions

  1. Spread basil pesto evenly on one side of each slice of sourdough bread.
  2. Sprinkle shredded mozzarella cheese on the pesto side of two slices.
  3. Top with the remaining bread slices, pesto side down, to form two sandwiches.
  4. Heat a skillet over medium heat and add unsalted butter.
  5. Once butter is melted, place sandwiches in the skillet.
  6. Cook for 3-4 minutes per side, until bread is golden brown and cheese is melted.
  7. Remove from heat, let cool slightly, and serve warm.
