  • 1 cup unsalted butter, softened
  • 1 cup light brown sugar, packed
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 cup canned pumpkin puree
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • Pumpkin pie spices (cinnamon, nutmeg, ginger) to taste
  • 1 cup chocolate chunks, plus more for topping
  • Optional Topping:
  • 1 cup cream cheese frosting

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper.
  2. In a mixing bowl, cream together softened butter and light brown sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until combined.
  4. Stir in the canned pumpkin puree until smooth.
  5. In a separate bowl, whisk together flour, baking powder, and pumpkin pie spices.
  6. Gradually fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
  7. Fold in the chocolate chunks, reserving some for the topping.
  8. Pour the batter into the prepared pan and spread evenly. Sprinkle reserved chocolate chunks on top.
  9. Bake for 30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  10. Let the bars cool completely in the pan before slicing and serving.

Notes

  • Use pure canned pumpkin puree, not pumpkin pie mix.
  • Lining the pan with parchment paper makes for easy removal.
  • For best results, do not overbake.
