- 1/3 cup pine nuts
- 1/3 cup dried cranberries
- 1/4 cup maple syrup
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 2 garlic cloves, crushed or minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Preheat your oven to 400ºF (200ºC). Line a large baking sheet with foil.
- In a small bowl, whisk together maple syrup, olive oil, balsamic vinegar, minced garlic, salt, and pepper to create the dressing.
- Place the halved Brussels sprouts and sliced carrots in a large bowl. Pour half of the dressing over the vegetables and toss to coat evenly.
- Spread the dressed vegetables in a single layer on the prepared baking sheet. Roast for 15 minutes.
- While the vegetables roast, toast the pine nuts in a small dry pan over medium heat for 2-3 minutes until fragrant, watching carefully to prevent burning.
- Remove the baking sheet from the oven. Drizzle the remaining dressing over the vegetables and add the rosemary sprigs. Stir gently to distribute the dressing and herbs.
- Return the baking sheet to the oven and roast for another 12-15 minutes, or until the vegetables are tender and slightly caramelized.
- Remove from the oven. Stir in the toasted pine nuts and dried cranberries. Serve the Roasted Brussels Sprouts and Carrots warm.
