Description
A hearty and comforting slow cooker casserole featuring layers of ground beef, beans, corn, and crispy tater tots topped with melted cheese.

- 1 lb ground beef
- 1 can (15 oz) corn, drained
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilis
- 1 package (30 oz) frozen tater tots
- 1 cup shredded cheddar cheese
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Brown the ground beef with chopped onion and minced garlic in a skillet over medium heat until cooked through. Drain any excess fat.
- In a slow cooker, combine the cooked beef mixture with corn, black beans, diced tomatoes, chili powder, cumin, and a sprinkle of salt and pepper. Mix well.
- Layer the frozen tater tots evenly on top of the mixture in the slow cooker.
- Cover and cook on low for 4-6 hours until the tater tots are crispy.
- In the last 30 minutes, sprinkle shredded cheddar cheese over the tater tots and cover to melt.
- Serve warm and enjoy!
