Description

This Slow Cooker French Onion Soup features sweet caramelized onions, savory beef broth, and gooey melted Gruyère cheese. It’s an easy, hands-off recipe that delivers amazing flavors.

Ingredients

Scale
  • 4 pounds yellow onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 8 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 4 sprigs fresh thyme
  • 2 bay leaves
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 French baguette, sliced into 1-inch rounds
  • 6 cups Gruyère cheese, shredded
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Slice onions thin and put them in your slow cooker with butter pieces spread out on top of the onions.
  2. Cook uncovered on high for 8-10 hours, stirring every so often, until onions are deep golden brown and sweet.
  3. Add beef broth, Worcestershire sauce, thyme, bay leaves, salt, and pepper to the slow cooker and stir everything together really well.
  4. Cover and cook on low for 2 hours so all the flavors blend together, and the onions get super soft.
  5. While the soup cooks, slice the bread into thick rounds and toast under the broiler until both sides are nice and golden.
  6. Take out thyme sprigs and bay leaves from the soup, then scoop hot soup into your oven-safe bowls.
  7. Put 1 or 2 toasted bread slices on top of each bowl and press down gently into the soup.
  8. Cover bread with lots of shredded Gruyère cheese, making sure all the bread is covered so it melts perfectly.
  9. Put bowls on a baking sheet and broil for 3-4 minutes until cheese bubbles and gets those yummy golden brown spots.
  10. Sprinkle with fresh parsley and serve right away while the cheese is hot, melted, and super stretchy – ENJOY!!!
