A delicious and effortless dish that combines the vibrant flavors of street corn with tender, juicy chicken, all made in your slow cooker.


Ingredients

  • 1 lb Boneless Chicken Breasts or Thighs
  • 2 cups Corn (Fresh grilled, frozen, or canned)
  • 4 oz Cream Cheese
  • 1/3 cup Cotija Cheese
  • 1 Lime (freshly squeezed juice)
  • 2 cloves Garlic (minced)
  • 1/2 tsp Chili Powder
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Onion Powder
  • Fresh Cilantro (optional)

Instructions

  1. Place the boneless chicken breasts or thighs at the bottom of your slow cooker.
  2. Add corn, cream cheese, cotija cheese, and minced garlic.
  3. Sprinkle chili powder, smoked paprika, onion powder, and squeeze lime juice over the top.
  4. Cover and set the slow cooker on Low for 6 hours or High for 3 hours.
  5. Once cooked, remove the chicken and shred it with two forks.
  6. Return shredded chicken to the slow cooker and mix with the sauce.
  7. Garnish with fresh cilantro if desired and serve in tortillas, over rice, or as a dip with chips.
