Description
These S’more Cookie Bars are an easy and delicious way to enjoy the classic campfire treat. They feature a chewy cookie base, a gooey milk chocolate center, and toasted marshmallow topping, all in a portable bar form.

- 1/2 cup (113g) unsalted butter, softened
- 1/2 cup (100g) granulated sugar
- 1/4 cup (50g) packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups (150g) all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup (170g) milk chocolate chips
- 1 1/2 cups mini marshmallows
- 1/2 cup graham cracker crumbs
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Press half of the cookie dough into the prepared baking pan to form an even layer.
- Bake for 10 minutes.
- Remove the pan from the oven and sprinkle the milk chocolate chips evenly over the partially baked cookie base.
- Top with the mini marshmallows and graham cracker crumbs.
- Crumble the remaining cookie dough over the marshmallow layer.
- Return the pan to the oven and bake for an additional 15-20 minutes, or until the marshmallows are golden brown and the cookie dough is set.
- Let the bars cool completely in the pan before lifting them out using the parchment paper overhang. Cut into bars and serve.
Notes
- Store in an airtight container at room temperature for up to 3 days.
- Reheat in the microwave for a few seconds or in a preheated oven at 350°F (175°C) for a few minutes.
- For gluten-free s’more cookie bars, use a gluten-free all-purpose flour blend.
- Try dark chocolate chips or peanut butter chips for variations.
