Description

These S’more Cookie Bars are an easy and delicious way to enjoy the classic campfire treat. They feature a chewy cookie base, a gooey milk chocolate center, and toasted marshmallow topping, all in a portable bar form.


Ingredients

  • 1/2 cup (113g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (50g) packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups (150g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (170g) milk chocolate chips
  • 1 1/2 cups mini marshmallows
  • 1/2 cup graham cracker crumbs

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Press half of the cookie dough into the prepared baking pan to form an even layer.
  7. Bake for 10 minutes.
  8. Remove the pan from the oven and sprinkle the milk chocolate chips evenly over the partially baked cookie base.
  9. Top with the mini marshmallows and graham cracker crumbs.
  10. Crumble the remaining cookie dough over the marshmallow layer.
  11. Return the pan to the oven and bake for an additional 15-20 minutes, or until the marshmallows are golden brown and the cookie dough is set.
  12. Let the bars cool completely in the pan before lifting them out using the parchment paper overhang. Cut into bars and serve.

Notes

  • Store in an airtight container at room temperature for up to 3 days.
  • Reheat in the microwave for a few seconds or in a preheated oven at 350°F (175°C) for a few minutes.
  • For gluten-free s’more cookie bars, use a gluten-free all-purpose flour blend.
