Description

Spicy Brazilian Coconut Chicken is a comforting dish that offers a blend of vibrant spices and creamy coconut, perfect for busy weeknights.


Ingredients

  • 1 tsp Ground Cumin
  • 1 tsp Cayenne Pepper
  • 1 tsp Turmeric
  • 1 tsp Ground Coriander
  • 1 tsp Garlic Powder
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 4 pieces Boneless, Skinless Chicken Breasts
  • 2 tbsp Olive Oil or Coconut Oil
  • 1 medium Onion
  • 1 piece Jalapeño Pepper
  • 1 inch Fresh Ginger
  • 2 cloves Garlic Cloves
  • 2 medium Tomatoes
  • 2 tbsp Freshly Squeezed Lemon Juice
  • 1 can Unsweetened Coconut Milk
  • 2 tbsp Fresh Parsley or Cilantro

Instructions

  1. Mix ground cumin, cayenne pepper, turmeric, ground coriander, garlic powder, salt, and pepper in a medium bowl.
  2. Coat the chicken breasts with the spice mix.
  3. Heat a skillet with oil, sear the chicken until golden brown, then set aside.
  4. Sauté onion and jalapeño in the skillet until soft.
  5. Add tomatoes and lemon juice; cook until softened.
  6. Stir in coconut milk and simmer for 5 minutes.
  7. Add chicken back to skillet and cook in sauce for another 5 minutes.
  8. Garnish with parsley or cilantro and serve warm.
