Instructions

  1. Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Add diced onion and sauté for about 5 minutes until soft.
  2. Add Garlic and Jalapeños: Stir in minced garlic and diced jalapeños, cooking for an additional 2 minutes.
  3. Incorporate Chicken and Broth: Add chicken breasts and broth. Bring to a boil, then reduce heat and simmer for about 15 minutes.
  4. Shred the Chicken: Remove chicken, cool slightly, and shred it before returning to the pot.
  5. Add Cream and Spices: Stir in heavy cream, cumin, and paprika. Season to taste and simmer for 5 minutes.
  6. Blend in Cream Cheese: Add softened cream cheese, stirring until fully dissolved into the soup.
  7. Melt the Cheddar: Mix in shredded cheddar cheese until melted and combined.
  8. Finish with Toppings: If desired, fold in crumbled bacon and simmer for an additional 5 minutes. Garnish with cilantro before serving.
