Instructions
- Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Add diced onion and sauté for about 5 minutes until soft.
- Add Garlic and Jalapeños: Stir in minced garlic and diced jalapeños, cooking for an additional 2 minutes.
- Incorporate Chicken and Broth: Add chicken breasts and broth. Bring to a boil, then reduce heat and simmer for about 15 minutes.
- Shred the Chicken: Remove chicken, cool slightly, and shred it before returning to the pot.
- Add Cream and Spices: Stir in heavy cream, cumin, and paprika. Season to taste and simmer for 5 minutes.
- Blend in Cream Cheese: Add softened cream cheese, stirring until fully dissolved into the soup.
- Melt the Cheddar: Mix in shredded cheddar cheese until melted and combined.
- Finish with Toppings: If desired, fold in crumbled bacon and simmer for an additional 5 minutes. Garnish with cilantro before serving.
Notes
- This soup can be made spicier by leaving some seeds in the jalapeños.
- Pre-cooked rotisserie chicken can save time.
