Description

Soft, creamy strawberry cheesecake cookies packed with fresh strawberry pieces and a rich cream cheese flavor.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 4 oz cream cheese, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 2¼ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup fresh strawberries, finely diced and patted dry
  • 2 tbsp powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F and line your baking sheet with parchment paper before you do anything else.
  2. Beat butter and sugar in your stand mixer on medium speed for 2–3 minutes until light and fluffy.
  3. Add cream cheese and egg to the mixer and beat until the mixture is fully smooth with no lumps.
  4. Slowly mix in flour, baking soda, and salt on low speed until a soft dough just comes together.
  5. Fold in diced strawberries gently with a spatula so the pieces stay whole and spread out evenly.
  6. Use your cookie scoop to portion dough balls and place them 2 inches apart on the baking sheet.
  7. Bake for 12–14 minutes until edges are golden, but the centers still look slightly soft and underdone.
  8. Cool cookies on your cooling rack for 10 minutes before serving — they firm up perfectly as they rest.
