- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 4 oz cream cheese, softened
- 1 large egg
- 1 tsp vanilla extract
- 2¼ cups all-purpose flour
- ½ tsp baking soda
- ¼ tsp salt
- 1 cup fresh strawberries, finely diced and patted dry
- 2 tbsp powdered sugar for dusting
Instructions
- Preheat your oven to 350°F and line your baking sheet with parchment paper before you do anything else.
- Beat butter and sugar in your stand mixer on medium speed for 2–3 minutes until light and fluffy.
- Add cream cheese and egg to the mixer and beat until the mixture is fully smooth with no lumps.
- Slowly mix in flour, baking soda, and salt on low speed until a soft dough just comes together.
- Fold in diced strawberries gently with a spatula so the pieces stay whole and spread out evenly.
- Use your cookie scoop to portion dough balls and place them 2 inches apart on the baking sheet.
- Bake for 12–14 minutes until edges are golden, but the centers still look slightly soft and underdone.
- Cool cookies on your cooling rack for 10 minutes before serving — they firm up perfectly as they rest.
