Description

Enjoy a delicious twist on breakfast with these gluten-free, vegan-friendly Strawberry Cheesecake Overnight Oats, perfect for a quick meal prep.

Ingredients

Scale
  • 1 cup Plain Greek Yogurt (Substitute with non-dairy yogurt for vegan option.)
  • 1 cup Rolled Oats (Opt for gluten-free oats if preferred.)
  • 1 cup Unsweetened Milk of Choice (Almond, soy, or oat milk can be used as substitutes.)
  • 2 tablespoons Chia Seeds or Ground Flax Meal (Adds thickness and omega-3 fatty acids.)
  • 1 teaspoon Vanilla Extract (Almond extract can be used for a unique twist.)
  • 1 pinch Salt (Balances sweetness and enhances flavor.)
  • 2 tablespoons Honey or Maple Syrup (Use agave nectar for a vegan-friendly option.)
  • 1 cup Fresh Strawberries (Frozen strawberries can work too but might add moisture.)
  • 4 ounces Softened Cream Cheese (Substitute with vegan cream cheese for dairy-free version.)
  • 1 tablespoon Lemon Zest (Can include lemon juice for extra flavor.)

Instructions

  1. In a medium-sized mixing bowl, combine Greek yogurt, rolled oats, unsweetened milk, chia seeds or ground flax meal, vanilla extract, and salt. Add honey or maple syrup, then fold in chopped strawberries and softened cream cheese mixed with lemon zest and juice until smooth.
  2. Transfer the mixture into a jar or airtight container, leaving space at the top for expansion as the oats absorb liquid.
  3. Seal the jar securely and refrigerate for at least 4 hours or preferably overnight to allow flavors to meld.
  4. In the morning, enjoy the oats cold or warm them in the microwave for about 30 seconds. Stir well and top with additional strawberries or honey if desired.
