Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/3 cup unsalted butter, melted and cooled
  • 1 large egg, room temperature
  • 3/4 cup whole milk
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, hulled and diced
  • 2 tbsp powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a 12-cup muffin tin with liners or grease it.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a separate bowl, mix melted butter, egg, milk, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and fold until just combined.
  5. Gently fold in the diced strawberries.
  6. Divide the batter among the muffin cups, filling each 2/3 full.
  7. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
  8. Cool in the pan for 5 minutes before transferring to a wire rack. Dust with powdered sugar before serving.
