Ingredients

  • 1 pound Boneless, Skinless Chicken Breasts or Thighs
  • 1/2 cup Sweet Chili Sauce
  • 1 tablespoon Soy Sauce
  • 2 tablespoons Lime Juice
  • 2 cloves Garlic
  • 1 tablespoon Ginger
  • 1 tablespoon Oil (Olive or Avocado)
  • 1/2 cup Mayonnaise or Greek Yogurt
  • 4 10-inch Flour or Spinach Tortillas
  • 2 cups Vegetables (Lettuce, Red Cabbage, Carrot, Cucumber)
  • 1/4 cup Cilantro and Green Onions (Optional)

Instructions

  1. In a bowl, mix together sweet chili sauce, soy sauce, lime juice, minced garlic, and freshly grated ginger until well combined. Marinade chicken for 15 minutes.
  2. While the chicken marinates, whisk together mayonnaise or Greek yogurt with a splash of sweet chili sauce and lime juice in a small bowl.
  3. Heat a skillet over medium-high heat, add oil, and sear the marinated chicken for 5 to 7 minutes until fully cooked.
  4. Reduce heat, pour any reserved marinade into the skillet with the chicken and simmer for 1 to 2 minutes.
  5. Warm the tortillas in a dry skillet over medium heat for about 20 to 30 seconds on each side.
  6. Lay a warm tortilla flat, spread the creamy mixture, layer fresh vegetables, and add slices of glazed chicken.
  7. Fold in the sides of the tortilla and roll from the bottom upwards to secure the filling.
  8. Slice the assembled wraps diagonally and serve immediately with a dipping sauce.
