Description

A comforting and savory breakfast casserole featuring crispy tater tots, breakfast sausage, bacon, fluffy eggs, and a blend of cheddar and Monterey Jack cheeses. Perfect for make-ahead convenience!


Ingredients

  • 1 lb / 450g breakfast sausage links, cooked and sliced
  • 8 slices bacon, crisped and crumbled
  • 32 oz / 900g frozen tater tots
  • 1012 large eggs
  • 1.5 cups / 360ml milk
  • 2 cups / 225g shredded cheddar + Monterey Jack cheese blend, divided
  • ¼ cup / 25g green onions, sliced (for garnish)

Instructions

  1. In a large skillet, cook breakfast sausage links until browned. Drain fat, slice into ½-inch pieces.
  2. In the same skillet, cook bacon until crisp. Drain on paper towels, then crumble.
  3. In a large bowl, whisk eggs and milk until light and frothy. Season with salt and pepper.
  4. Grease a 9×13-inch baking dish. Spread frozen tater tots evenly on the bottom.
  5. Scatter cooked sausage and crumbled bacon over the tots. Sprinkle with 1 cup of the cheese blend.
  6. Pour egg mixture over the layers, ensuring it seeps down. Top with remaining 1 cup of cheese.
  7. Cover dish tightly and refrigerate overnight (or at least 4 hours).
  8. Preheat oven to 375°F (190°C). Uncover casserole and bake for 45-55 minutes, until golden brown and set.
  9. Let rest for 5-10 minutes, then garnish with green onions and serve warm.
