- 1 lb / 450g breakfast sausage links, cooked and sliced
- 8 slices bacon, crisped and crumbled
- 32 oz / 900g frozen tater tots
- 10–12 large eggs
- 1.5 cups / 360ml milk
- 2 cups / 225g shredded cheddar + Monterey Jack cheese blend, divided
- ¼ cup / 25g green onions, sliced (for garnish)
Instructions
- In a large skillet, cook breakfast sausage links until browned. Drain fat, slice into ½-inch pieces.
- In the same skillet, cook bacon until crisp. Drain on paper towels, then crumble.
- In a large bowl, whisk eggs and milk until light and frothy. Season with salt and pepper.
- Grease a 9×13-inch baking dish. Spread frozen tater tots evenly on the bottom.
- Scatter cooked sausage and crumbled bacon over the tots. Sprinkle with 1 cup of the cheese blend.
- Pour egg mixture over the layers, ensuring it seeps down. Top with remaining 1 cup of cheese.
- Cover dish tightly and refrigerate overnight (or at least 4 hours).
- Preheat oven to 375°F (190°C). Uncover casserole and bake for 45-55 minutes, until golden brown and set.
- Let rest for 5-10 minutes, then garnish with green onions and serve warm.
