Instructions
- In a large bowl, mix flour, sugar, baking powder, and salt until well combined.
- In another bowl, whisk together milk, eggs, vanilla extract, and melted butter until smooth.
- Combine the wet and dry ingredients until a soft dough forms, being careful not to overmix.
- Roll out the dough to about 1/2 inch thickness on a lightly floured surface and cut into squares.
- Heat oil in a deep fryer or large pot to 350°F (175°C).
- Fry beignets in batches until golden brown, about 2-3 minutes per side.
- Use a slotted spoon to transfer beignets to a paper towel-lined plate to drain excess oil.
- Dust with powdered sugar while warm and serve immediately.
