Ingredients

  • 2 Whole Wheat or Gluten-Free Tortillas
  • 2 Ripe Avocados
  • ½ Cup Black Beans, Precooked and Rinsed
  • ¼ Cup Corn
  • 2 Tablespoons Red Onion, Diced
  • Juice of ½ Lime
  • 1 Clove Garlic, Minced
  • 1 Teaspoon Cumin
  • Crushed Red Pepper to taste
  • A handful of Fresh Cilantro, chopped
  • Sea Salt and Cracked Pepper to taste
  • Olive Oil for cooking

Instructions

  1. Mash the avocados in a mixing bowl until smooth. Stir in garlic, lime juice, salt, pepper, and crushed red pepper.
  2. Gently fold in black beans, corn, diced onion, and chopped cilantro until well combined.
  3. Heat olive oil in a non-stick skillet over medium heat.
  4. Spoon half of the avocado mixture onto one half of a tortilla and fold it over. Repeat with remaining tortillas.
  5. Cook each folded quesadilla in the skillet for 2-3 minutes per side until golden brown and crispy.
  6. Slice the quesadillas into wedges and serve immediately.
