- 2 Whole Wheat or Gluten-Free Tortillas
- 2 Ripe Avocados
- ½ Cup Black Beans, Precooked and Rinsed
- ¼ Cup Corn
- 2 Tablespoons Red Onion, Diced
- Juice of ½ Lime
- 1 Clove Garlic, Minced
- 1 Teaspoon Cumin
- Crushed Red Pepper to taste
- A handful of Fresh Cilantro, chopped
- Sea Salt and Cracked Pepper to taste
- Olive Oil for cooking
Instructions
- Mash the avocados in a mixing bowl until smooth. Stir in garlic, lime juice, salt, pepper, and crushed red pepper.
- Gently fold in black beans, corn, diced onion, and chopped cilantro until well combined.
- Heat olive oil in a non-stick skillet over medium heat.
- Spoon half of the avocado mixture onto one half of a tortilla and fold it over. Repeat with remaining tortillas.
- Cook each folded quesadilla in the skillet for 2-3 minutes per side until golden brown and crispy.
- Slice the quesadillas into wedges and serve immediately.
