Ingredients
Scale
- 3 cups peeled and chopped apples (such as Granny Smith or Honeycrisp)
- 2 cups granulated sugar
- 1 cup vegetable oil
- 3 large eggs
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 cup chopped pecans or walnuts (optional)
- For the glaze:
- 1 cup brown sugar
- 1/2 cup unsalted butter
- 1/4 cup milk or heavy cream
- Pinch of salt
Instructions
- Preheat oven to 350°F and grease and flour a bundt or tube pan.
- In a large mixing bowl, combine sugar, oil, and eggs. Beat until well blended, then stir in the vanilla.
- In another bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the chopped apples and nuts if using. The batter will be thick.
- Spoon the mixture evenly into the prepared pan and smooth the top.
- Bake for 60 to 70 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 to 15 minutes before turning it out onto a wire rack.
- While the cake is cooling, prepare the glaze by combining brown sugar, butter, milk, and a pinch of salt in a saucepan over medium heat.
- Stir constantly until the mixture begins to boil. Let it simmer for about 2 minutes, then remove from heat.
- While the cake is still warm, slowly spoon or pour the glaze over the top, allowing it to soak in and drip down the sides.
- Let the cake cool completely before slicing.
