  • 1 cup all-purpose flour
  • 1/2 teaspoon cinnamon
  • 1 tablespoon baking powder
  • 2 tablespoons light brown sugar (or granulated sugar)
  • 1/2 teaspoon kosher salt
  • Almond butter, banana slices, honey, or maple syrup for serving

Instructions

  1. Mash the bananas until gooey but slightly chunky.
  2. Whisk in the egg (or flax egg), neutral oil, and milk until blended.
  3. In a separate bowl, whisk together flour, cinnamon, baking powder, sugar, and salt.
  4. Fold the dry ingredients into the wet ingredients until you have a smooth, thick batter.
  5. Heat a lightly greased skillet over low heat.
  6. Pour 1/4 cup of batter onto the skillet; cook until bubbles form, then flip and cook until golden brown.
