Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup sugar
  • 1/2 cup butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 2 cups peeled and chopped apples
  • 1 cup caramel sauce
  • 1/2 tsp cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a medium bowl, combine graham cracker crumbs, 1/3 cup sugar, and melted butter, mixing until it resembles wet sand. Press this mixture into the bottom of the prepared pan.
  3. In a large bowl, beat together cream cheese, 1 cup sugar, and vanilla until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Fold in apples and cinnamon until just combined.
  6. Pour cheesecake mixture over the crust, smoothing it out.
  7. Drizzle caramel sauce on top and swirl into the cheesecake with a knife.
  8. Bake for 30-35 minutes or until the center is set.
  9. Allow to cool, then refrigerate for at least 2 hours before slicing into bars.
