Creamy and cheesy Chicken Cheddar Gnocchi Soup, perfect for a cozy night in.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup diced celery
  • 1/2 cup diced carrots
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (16 ounce) package potato gnocchi
  • 1 cup chopped turkey substitute
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh parsley, for garnish

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Season the chicken with salt and pepper and add it to the pot. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.
  2. Add the celery, carrots, and garlic to the pot and cook until softened, about 5 minutes.
  3. Pour in the chicken broth and bring to a boil. Add the gnocchi and cook according to package directions, about 2-3 minutes.
  4. Stir in the cooked chicken and turkey substitute. Reduce heat to low and stir in the milk and cheddar cheese until the cheese is melted and the soup is creamy.
  5. Garnish with fresh parsley and serve hot.
