- 1.5 lbs chicken breast, cubed
- 2 cups corn kernels (fresh, frozen, or canned)
- 2 cups potatoes, diced
- 1 cup heavy cream
- 4 cups chicken broth
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon smoked paprika
- ½ cup shredded cheddar cheese
- 3 strips of bacon, cooked and crumbled
- 2 tablespoons fresh chives, chopped
Instructions
- Melt butter in your Dutch oven over medium heat until it starts to foam and shimmer nicely.
- Add onion and garlic and cook until soft, translucent, and smelling wonderfully fragrant all around.
- Stir in flour and cook for one minute to get rid of any raw flour taste completely.
- Add chicken and cook, stirring now and then, until golden and fully cooked on every side.
- Pour in chicken broth and add potatoes, then bring the whole pot to a boil gently.
- Turn the heat down and simmer until potatoes are soft and the broth starts to thicken naturally.
- Stir in corn and heavy cream until everything blends into a smooth, creamy, and velvety soup.
- Add salt, black pepper, and smoked paprika, then let the chowder simmer for 5 more minutes.
- Ladle into bowls and top with cheddar, crispy bacon, and chives — then ENJOY!!!
