Description

A rich, creamy one-pot chicken corn chowder loaded with tender chicken, sweet corn, and hearty potatoes. Perfect for easy, cozy weeknight dinners, the whole family will love.


Ingredients

  • 1.5 lbs chicken breast, cubed
  • 2 cups corn kernels (fresh, frozen, or canned)
  • 2 cups potatoes, diced
  • 1 cup heavy cream
  • 4 cups chicken broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ½ cup shredded cheddar cheese
  • 3 strips of bacon, cooked and crumbled
  • 2 tablespoons fresh chives, chopped

Instructions

  1. Melt butter in your Dutch oven over medium heat until it starts to foam and shimmer nicely.
  2. Add onion and garlic and cook until soft, translucent, and smelling wonderfully fragrant all around.
  3. Stir in flour and cook for one minute to get rid of any raw flour taste completely.
  4. Add chicken and cook, stirring now and then, until golden and fully cooked on every side.
  5. Pour in chicken broth and add potatoes, then bring the whole pot to a boil gently.
  6. Turn the heat down and simmer until potatoes are soft and the broth starts to thicken naturally.
  7. Stir in corn and heavy cream until everything blends into a smooth, creamy, and velvety soup.
  8. Add salt, black pepper, and smoked paprika, then let the chowder simmer for 5 more minutes.
  9. Ladle into bowls and top with cheddar, crispy bacon, and chives — then ENJOY!!!
