Ingredients

  • 2 cups orzo pasta
  • 1 tablespoon olive oil
  • 1 pound chicken sausage (sliced)
  • 2 cups broccoli florets
  • 3 cloves garlic (minced)
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley (chopped)

Instructions

  1. Heat olive oil in a large pot over medium heat, then add sliced chicken sausage and cook for 5–7 minutes until browned.
  2. Add minced garlic and cook for 1 minute until fragrant.
  3. Add broccoli florets and let them soften for 2–3 minutes.
  4. Stir in orzo pasta and pour in chicken broth. Sprinkle in Italian seasoning, salt, and pepper. Bring to a boil, then reduce to a simmer. Cover and cook for 10–12 minutes, stirring occasionally.
  5. Once orzo is tender and most liquid is absorbed, remove from heat and stir in grated Parmesan cheese until melted and creamy. Garnish with fresh parsley before serving.
