- 2 tablespoons Olive Oil
- 4 cups Fresh Spinach
- 1 cup Dried Cranberries
- 8 ounces Brie Cheese
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1 teaspoon Dried Thyme
- 1 cup Chicken Broth
Instructions
- Preheat your oven to 375°F (190°C).
- Slice a pocket into each chicken breast.
- Season with salt, pepper, garlic powder, onion powder, and thyme.
- Sauté spinach in olive oil until wilted, about 3-4 minutes.
- Mix sautéed spinach with dried cranberries for stuffing.
- Stuff the chicken breasts with the spinach-cranberry mixture and Brie.
- Secure with toothpicks.
- Sear in a skillet until golden brown, about 3 minutes per side.
- Add chicken broth and scrape up browned bits.
- Bake in the oven for 20-25 minutes until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 5 minutes before serving.
