Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups beef broth
  • 1 cup water
  • 8 ounces lasagna noodles, broken into small pieces
  • 1 1/2 cups ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  2. Add chopped onion and minced garlic to the pot and cook until softened, about 3-5 minutes.
  3. Stir in dried oregano, dried basil, and red pepper flakes (if using). Cook for 1 minute more, until fragrant.
  4. Pour in crushed tomatoes, beef broth, and water. Bring to a boil, then reduce heat and simmer for 15 minutes, stirring occasionally.
  5. Add broken lasagna noodles to the soup and cook until tender, about 8-10 minutes.
  6. In a small bowl, combine ricotta cheese, Parmesan cheese, and parsley. Season with salt and pepper to taste.
  7. Stir the ricotta cheese mixture into the soup and cook until heated through, about 2-3 minutes. Be careful not to boil.
  8. Season the soup with salt and pepper to taste. Serve hot and enjoy!
