  • 1 tablespoon Olive Oil
  • 1 teaspoon Chili Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 2 tablespoons Butter
  • 2 tablespoons All-Purpose Flour
  • 1 cup Milk
  • 1.5 cups Shredded Cheddar Cheese
  • 1 cup Diced Tomatoes
  • 1 can Diced Green Chilies
  • 1 teaspoon Paprika

Instructions

  1. Combine chili powder, cumin, garlic powder, onion powder, salt, and pepper in a small bowl and rub on both sides of the chicken breasts.
  2. Heat olive oil in a skillet over medium heat, and cook the chicken breasts for 6-7 minutes on each side until golden brown and no longer pink.
  3. Melt butter in the same skillet, whisk in flour to form a roux, cooking for about 1 minute.
  4. Gradually whisk in milk, stirring until sauce thickens (3-5 minutes).
  5. Stir in cheddar cheese, tomatoes, and chilies; mix until cheese is melted and sauce is smooth.
  6. Return sliced chicken to the skillet, coating thoroughly in cheese sauce and simmering for a few minutes.
  7. Serve the creamy chicken with cheese sauce alongside rice or tortillas.
