  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1/2 cup chicken broth
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 tbsp butter
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes per side, or until cooked through. Remove chicken from skillet and set aside.
  3. In a medium saucepan, combine rice, chicken broth, and butter. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until rice is tender and liquid is absorbed. Fluff with a fork and set aside.
  4. In the same skillet used for the chicken, melt butter over medium heat. Whisk in flour until smooth. Gradually add milk, whisking constantly to prevent lumps. Bring to a simmer, then reduce heat to low.
  5. Stir in salt, pepper, and garlic powder. Simmer for 5 minutes, or until sauce has thickened. Stir in Parmesan cheese and parsley.
  6. Slice the cooked chicken breasts. Add the cooked rice to the skillet with the creamy sauce. Stir to combine.
  7. Place the sliced chicken on top of the rice and sauce. Spoon some extra sauce over the chicken.
  8. Garnish with additional parsley, if desired. Serve immediately.
