- 1.5 lbs boneless, skinless chicken breasts
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 1/2 cup chicken broth
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 tbsp butter
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 2 cups milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1/4 cup grated Parmesan cheese
- 2 tbsp chopped fresh parsley
Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes per side, or until cooked through. Remove chicken from skillet and set aside.
- In a medium saucepan, combine rice, chicken broth, and butter. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until rice is tender and liquid is absorbed. Fluff with a fork and set aside.
- In the same skillet used for the chicken, melt butter over medium heat. Whisk in flour until smooth. Gradually add milk, whisking constantly to prevent lumps. Bring to a simmer, then reduce heat to low.
- Stir in salt, pepper, and garlic powder. Simmer for 5 minutes, or until sauce has thickened. Stir in Parmesan cheese and parsley.
- Slice the cooked chicken breasts. Add the cooked rice to the skillet with the creamy sauce. Stir to combine.
- Place the sliced chicken on top of the rice and sauce. Spoon some extra sauce over the chicken.
- Garnish with additional parsley, if desired. Serve immediately.
