- 2 cups fresh spinach
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup Parmesan cheese, grated
- 1/2 cup flour (for breading)
- Salt and pepper to taste
- 2 tbsp olive oil for cooking
Instructions
- Season chicken breasts with salt and pepper, then coat with flour.
- In a large pan, heat olive oil over medium heat and cook chicken for 6-7 minutes per side until golden brown.
- Remove chicken from the pan and set aside.
- Add minced garlic to the same pan and sauté for about 30 seconds until fragrant.
- Toss in the spinach and cook until wilted, about 1-2 minutes.
- Pour in chicken broth and bring to a simmer, then add heavy cream and Parmesan cheese, stirring until creamy.
- Return chicken to the pan and coat with the sauce, cooking for an additional 2-3 minutes.
- Serve hot, garnished with extra cheese or fresh herbs if desired.
