- 1 tablespoon (15ml) olive oil
- 1 small onion, chopped (about 1 cup / 120g)
- 2 cloves garlic, minced (about 1 teaspoon / 5g)
- 28 ounces (794g) crushed tomatoes
- 1 cup (240ml) vegetable broth
- 1/2 cup (120ml) heavy cream
- 1 teaspoon sugar
- 1/2 teaspoon dried basil
- Salt and pepper to taste
- Optional: Fresh basil for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Pour in the crushed tomatoes and vegetable broth. Stir in the sugar and dried basil.
- Bring the mixture to a simmer and cook for 15-20 minutes, allowing the flavors to meld together.
- Remove the pot from the heat and carefully use an immersion blender to blend the soup until smooth. Alternatively, you can transfer the soup to a regular blender in batches, ensuring to vent the lid.
- Return the pot to low heat and stir in the heavy cream. Season with salt and pepper to taste.
- Heat through gently, but do not boil after adding the cream to prevent curdling.
- Serve hot, garnished with fresh basil if desired.
