- 1.5 pounds boneless, skinless chicken breast or thighs
- 3 cloves garlic (or substitute with garlic powder (1 teaspoon))
- 1 ounce Parmesan cheese, freshly grated (about ¼ cup, or try aged Pecorino)
- 0.75 teaspoon kosher salt (or sea salt as an alternative)
- 0.25 teaspoon black pepper, freshly ground (or white pepper for a milder flavor)
- 4 tablespoons unsalted butter (or olive oil for a dairy-free alternative)
- 3 sprigs fresh parsley, chopped (omit if in a pinch)
Instructions
- Begin by mincing 3 cloves of garlic, grating 1 ounce of Parmesan cheese, and chopping 3 sprigs of fresh parsley.
- Cut 1 ½ pounds of boneless, skinless chicken breast or thighs into 1-inch pieces. Toss the chicken with ¾ teaspoon of kosher salt and ¼ teaspoon of black pepper.
- Heat a skillet over medium heat and melt 2 tablespoons of unsalted butter. Add half of the seasoned chicken pieces and cook for about 4 minutes until golden brown.
- Transfer the cooked chicken to a plate, add the remaining 2 tablespoons of butter to the skillet, and repeat with the second batch of chicken.
- Reduce heat to low, add minced garlic, stir for 30 seconds, then return the cooked chicken and juices to the skillet.
- Remove from heat, add grated Parmesan and chopped parsley, and toss until well coated.
- Plate the Garlic Parmesan Chicken Bites and garnish with extra Parmesan cheese.
