Ingredients

  • 1.5 pounds boneless, skinless chicken breast or thighs
  • 3 cloves garlic (or substitute with garlic powder (1 teaspoon))
  • 1 ounce Parmesan cheese, freshly grated (about ¼ cup, or try aged Pecorino)
  • 0.75 teaspoon kosher salt (or sea salt as an alternative)
  • 0.25 teaspoon black pepper, freshly ground (or white pepper for a milder flavor)
  • 4 tablespoons unsalted butter (or olive oil for a dairy-free alternative)
  • 3 sprigs fresh parsley, chopped (omit if in a pinch)

Instructions

  1. Begin by mincing 3 cloves of garlic, grating 1 ounce of Parmesan cheese, and chopping 3 sprigs of fresh parsley.
  2. Cut 1 ½ pounds of boneless, skinless chicken breast or thighs into 1-inch pieces. Toss the chicken with ¾ teaspoon of kosher salt and ¼ teaspoon of black pepper.
  3. Heat a skillet over medium heat and melt 2 tablespoons of unsalted butter. Add half of the seasoned chicken pieces and cook for about 4 minutes until golden brown.
  4. Transfer the cooked chicken to a plate, add the remaining 2 tablespoons of butter to the skillet, and repeat with the second batch of chicken.
  5. Reduce heat to low, add minced garlic, stir for 30 seconds, then return the cooked chicken and juices to the skillet.
  6. Remove from heat, add grated Parmesan and chopped parsley, and toss until well coated.
  7. Plate the Garlic Parmesan Chicken Bites and garnish with extra Parmesan cheese.
