Ingredients

  • 1 tablespoon olive oil (or sesame oil)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced or grated
  • 4 cups low-sodium chicken broth
  • 2 cups water
  • 2 cups cooked, shredded rotisserie chicken
  • 1 cup carrots, sliced thinly or julienned
  • 1 cup celery, sliced
  • 2 cups bok choy or spinach (optional)
  • 2 tablespoons soy sauce (or tamari)
  • 1 tablespoon rice vinegar (optional)
  • 1 teaspoon sesame oil (optional)
  • 1 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper, to taste
  • 4 oz dry egg noodles, rice noodles, or any noodles of your choice
  • Fresh cilantro or green onions, chopped
  • Lime wedges
  • A drizzle of sesame oil or chili oil
  • Sriracha or your favorite hot sauce (optional)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and sauté for about 2-3 minutes until softened. Add the minced garlic and grated ginger; sauté for an additional 1-2 minutes until fragrant.
  2. Pour in the chicken broth and water, stirring to combine. Bring the mixture to a simmer. Add the shredded chicken, sliced carrots, and sliced celery, then let simmer for 10-15 minutes.
  3. Season the soup with soy sauce, rice vinegar, and sesame oil. If desired, add crushed red pepper flakes for heat. Adjust seasoning with salt and pepper as needed.
  4. In a separate pot, bring water to a boil and cook the noodles according to package instructions (4-6 minutes). Drain and set aside.
  5. Add the cooked noodles to the soup or place in serving bowls and pour the hot soup over them. Stir in any greens in the last few minutes of cooking.
  6. Ladle the soup into bowls, garnish with fresh cilantro or green onions, and serve with lime wedges and any desired additional garnishes.
