Description

Deliciously golden focaccia muffins with a crispy crust and a soft interior, infused with garlic and fresh rosemary.


Ingredients

  • 3 cups all-purpose flour
  • 1 tsp salt
  • 1 tbsp sugar
  • 2 1/4 tsp active dry yeast
  • 1 1/4 cups warm water
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 1/2 tsp ground black pepper
  • Butter, for serving (optional)

Instructions

  1. In a small bowl, combine warm water and sugar, then sprinkle yeast on top. Let sit for 5 minutes until frothy.
  2. In a large mixing bowl, combine flour, salt, garlic, rosemary, and black pepper, and stir to mix.
  3. Add the yeast mixture and olive oil to the dry ingredients and mix until a dough forms.
  4. Transfer the dough to a lightly floured surface and knead for about 5 minutes until smooth.
  5. Place the dough in a greased bowl, cover with a towel, and let rise in a warm place for about 1 hour or until doubled in size.
  6. Preheat the oven to 375°F (190°C).
  7. Punch down the dough and divide it into muffin tin sections, filling them halfway.
  8. Bake for about 15-20 minutes until golden brown.
  9. Let cool slightly before serving warm with butter.
