Description

A vibrant, healthy, and incredibly easy one-pan meal that puts a wholesome twist on classic taco flavors.


Ingredients

  • 1 lb (450g) lean ground beef
  • 2 large sweet potatoes, peeled and diced (about 3 cups / 450g)
  • 1 large onion, diced (about 1.5 cups / 150g)
  • 1 (15 oz / 425g) can black beans, drained and rinsed
  • 1 cup (160g) corn kernels, fresh or frozen
  • 1 packet (approx. 1 oz / 28g) taco seasoning
  • 1/2 cup (120ml) beef broth
  • 1 cup (115g) shredded cheddar cheese
  • For garnish: fresh cilantro, chopped or sour cream
  • Optional: lime wedges for serving

Instructions

  1. Dice the sweet potatoes into small, even cubes to ensure quicker and more even cooking.
  2. In a large, sturdy skillet, cook the diced sweet potatoes with a splash of water over medium-high heat until tender, about 8–10 minutes. Drain any excess water if necessary.
  3. Push the tender sweet potatoes to one side of the skillet. Add the lean ground beef and diced onion to the other side. Cook, breaking up the beef with a spoon, until the beef is fully browned and the onion is softened, approximately 5–7 minutes. Drain any accumulated grease.
  4. Stir in the drained black beans, corn kernels, the entire packet of taco seasoning, and the beef broth. Mix thoroughly until everything is well combined and the seasoning is evenly distributed.
  5. Bring the mixture to a gentle simmer and cook for 5 minutes, allowing the sauce to thicken and the flavors to blend. Stir occasionally.
  6. Sprinkle the shredded cheddar cheese evenly over the top of the mixture. Cover the skillet with a lid or foil and let it sit for 2–3 minutes, or until the cheese is fully melted and bubbly.
  7. Remove from heat. Garnish generously with fresh cilantro or add a dollop of sour cream if desired. Serve immediately with lime wedges for an extra burst of flavor.
