Description

This Halloween Cookies and Cream Cheesecake recipe is a festive and creamy dessert perfect for autumn gatherings. It features a crunchy chocolate cookie crust and a rich, chocolatey cheesecake filling, topped with whipped cream and Halloween sprinkles.

Ingredients

Scale
  • For the Crust:
  • 24 Chocolate Sandwich Cookies
  • 1/2 cup Unsalted Butter, melted
  • For the Filling:
  • 16 oz Cream Cheese, softened
  • 1 cup Granulated Sugar
  • 1/2 cup Sour Cream
  • 1 tsp Vanilla Extract
  • 3 large Eggs
  • 1/2 cup Unsweetened Cocoa Powder
  • 1 cup additional crushed cookies (for filling)
  • For Garnishing:
  • 1 cup Whipped Topping
  • 1 cup Halloween Sprinkles

Instructions

  1. Preheat oven to 350°F (175°C). Pulse chocolate sandwich cookies into fine crumbs in a food processor. Blend in melted butter until combined. Press mixture into the bottom of a greased springform pan to form the crust. Bake for 10 minutes, then remove and cool completely.
  2. In a large mixing bowl, beat softened cream cheese with an electric mixer until smooth. Gradually add granulated sugar, mixing until fluffy. Blend in sour cream and vanilla extract until fully incorporated.
  3. Add eggs one at a time to the cream cheese mixture, mixing thoroughly after each addition.
  4. Gently fold in unsweetened cocoa powder and an additional cup of crushed cookies into the filling mixture.
  5. Pour the filling over the cooled crust in the springform pan. Bake for 50-60 minutes, until the edges are set and the center gently jiggles.
  6. Remove the cheesecake from the oven and let it cool at room temperature for about an hour. Cover and refrigerate for at least 4 hours, or overnight for best results.
  7. Before serving, top the Halloween Cookies and Cream Cheesecake with whipped topping and Halloween sprinkles. Slice and serve.

Notes

  • Ensure cream cheese and eggs are at room temperature for a smooth filling.
  • Cool the cheesecake gradually to prevent cracking.
  • Allow adequate chilling time for optimal flavor and texture.
  • High-quality cocoa powder will yield the best flavor.
