- 1 cup shredded zucchini (do not squeeze)

- 1/4 teaspoon fine sea salt
- 1/3 cup chocolate chips, plus extra for topping
Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8 inch baking pan with cooking spray.
- In a large mixing bowl, combine peanut butter, maple syrup, vanilla extract, and shredded zucchini. Whisk until smooth.
- Add cacao powder, ground flaxseed, baking soda, and salt to the bowl. Stir well until combined.
- Gently fold in 1/3 cup chocolate chips using a rubber spatula, reserving some for the topping.
- Spread the batter evenly into the prepared pan. Sprinkle the reserved chocolate chips on top.
- Bake for 25-30 minutes, or until a knife inserted into the center comes out mostly clean with a few moist crumbs.
