  • 2 tablespoons Olive Oil (or vegetable oil as an alternative)
  • 1 cup Onion (chopped; can also use shallots)
  • 1 cup Carrots (diced; bell peppers can be a substitute)
  • 1 pound Ground Pork (can substitute with turkey or chicken)
  • 3 cloves Garlic (minced; garlic powder can be used if needed)
  • 1 tablespoon Ginger (freshly grated; ground ginger is acceptable)
  • 4 cups Chicken Stock (vegetable broth can be used for a vegetarian option)
  • 2 tablespoons Soy Sauce (tamari for gluten-free option)
  • 2 tablespoons Hoisin Sauce (BBQ sauce can be used in a pinch)
  • 1 tablespoon Sriracha (adjust to taste for spice level)
  • 4 cups Cabbage (chopped; bok choy or spinach can be replaced)
  • 1 tablespoon Sesame Oil (or olive oil for a lighter option)
  • 2 stalks Green Onions (sliced; chives can be used instead)
  • 2 tablespoons Sesame Seeds (optional; toasted almonds can be used)
  • 1 cup Wonton Strips (optional; omit for gluten-free)

Instructions

  1. Sauté the Vegetables: In a large pot, heat olive oil over medium heat. Add chopped onion and diced carrots; sauté for 5 minutes until onions are translucent.
  2. Brown the Ground Meat: Add ground pork, breaking it into chunks. Cook for 6-8 minutes until browned.
  3. Add Aromatics: Stir in minced garlic and grated ginger; cook for 2 minutes until fragrant.
  4. Incorporate the Broth and Sauces: Pour chicken stock, soy sauce, hoisin sauce, and sriracha. Bring to a gentle boil.
  5. Add the Cabbage and Simmer: Mix in chopped cabbage, reduce heat to low, and simmer uncovered for 15 minutes.
  6. Finish with Sesame Oil: Stir in sesame oil and warm through for a couple of minutes.
  7. Serve and Garnish: Ladle soup into bowls and garnish with green onions, sesame seeds, and more sriracha if desired.
