A quick and easy one-pan Honey BBQ Chicken Rice Skillet recipe packed with tender chicken, sweet and smoky barbecue sauce, fluffy rice, and melted cheese. Perfect for busy weeknights.

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, diced
- Salt and black pepper to taste
- 1 teaspoon garlic powder
- 1 small onion, diced
- 1 red bell pepper, diced
- 1 cup corn (fresh, canned, or frozen)
- 1 ½ cups cooked white rice
- ¾ cup honey barbecue sauce
- ½ cup shredded cheddar cheese
- 2 green onions, sliced, for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add the diced chicken and season with salt, pepper, and garlic powder. Cook for 6 to 8 minutes, stirring occasionally, until the chicken is fully cooked and lightly browned.
- Add the diced onion and red bell pepper to the skillet. Sauté for 3 to 4 minutes until the vegetables are tender. Stir in the corn and cook for another minute.
- Reduce the heat to low. Add the cooked rice to the skillet and pour in the honey barbecue sauce. Stir everything together until the mixture is evenly coated and heated through.
- Sprinkle the shredded cheddar cheese over the top. Cover the skillet with a lid and let it sit for 2 to 3 minutes, just until the cheese is melted.
