Ingredients

  • 4 pieces Chicken Breasts, skinless and boneless
  • to taste Salt
  • to taste Pepper
  • 1 teaspoon Garlic Powder
  • 1/2 cup Flour
  • 4 tablespoons Butter
  • 2 tablespoons Olive Oil
  • 1/2 cup Chicken Broth or Dry White Wine
  • 1 tablespoon Lemon Juice
  • 1 tablespoon Lemon Zest
  • 2 tablespoons Capers
  • 1/4 cup Heavy Cream
  • to taste Garnish (Parsley/Parmesan)

Instructions

  1. Slice the chicken breasts lengthwise to create four thin cutlets, season with salt, pepper, and garlic powder, then dredge in flour.
  2. In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium-high heat. Add the chicken cutlets and cook until golden brown.
  3. Remove the chicken and add 1/2 cup of chicken broth or wine, lemon juice and zest, and 2 tablespoons of capers to the skillet.
  4. Return to medium heat, scraping up any browned bits, and then stir in 1/4 cup of heavy cream if desired.
  5. Return the chicken to the skillet and simmer for an additional 5 minutes.
  6. Remove from heat, garnish with parsley or Parmesan if desired, and serve hot.
