Description

A comforting and hearty Italian-inspired soup featuring savory turkey sausage, tender white beans, diced tomatoes, and fresh spinach in a rich, herby broth.


Ingredients

  • 1 tablespoon (15ml) olive oil
  • 1 pound (450g) turkey sausage, casings removed
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups (1.4 liters) vegetable broth
  • 2 cans (15 ounces each / 425g each) white beans, drained and rinsed
  • 1 can (14.5 ounces / 410g) diced tomatoes
  • 1 teaspoon (5g) dried oregano
  • 1 teaspoon (5g) dried basil
  • Salt and pepper to taste
  • 2 cups (60g) fresh spinach

Instructions

  1. Heat olive oil in a large pot over medium heat. Add turkey sausage and cook until browned, breaking it into small pieces, about 5-7 minutes.
  2. Add onion, carrots, and celery to the pot. Cook until vegetables are softened, about 5 minutes.
  3. Stir in garlic and cook for 1 minute until fragrant.
  4. Pour in vegetable broth, white beans, diced tomatoes, oregano, and basil. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 20 minutes to allow flavors to meld.
  6. Season with salt and pepper to taste.
  7. Stir in fresh spinach and cook until wilted, about 2 minutes.
  8. Serve hot, optionally garnished with grated Parmesan cheese if desired.
