Description

Ingredients

  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground allspice
  • ½ cup unsalted butter, softened
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon rum extract (optional)
  • 1 cup shredded sweetened coconut
  • ½ cup raisins or chopped dried pineapple

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and allspice.
  3. In a separate large bowl, cream the butter with the brown sugar and granulated sugar until light and fluffy. Beat in the egg, vanilla extract, and rum extract if using.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Fold in the shredded coconut and raisins or dried pineapple.
  6. Scoop tablespoons of dough onto the prepared baking sheet, spacing them about two inches apart.
  7. Bake for 10 to 12 minutes or until the edges are golden brown and the centers are set.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
