- 1 ½ lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 2 tablespoons olive oil
- 2 teaspoons garlic powder
- 1 packet ranch seasoning mix
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ½ cup grated Parmesan cheese
- Chopped fresh parsley for garnish (optional)
- Wooden or metal skewers
Instructions
- In a large bowl, combine olive oil, garlic powder, ranch seasoning, black pepper, paprika, and Parmesan cheese. Add the chicken pieces and toss until fully coated. Cover and marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
- If using wooden skewers, soak them in water for 20 to 30 minutes to prevent burning.
- Preheat a grill, grill pan, or oven to 400°F. Thread the marinated chicken pieces onto skewers, leaving a little space between each piece for even cooking.
- Place the skewers on the grill or a lined baking sheet if using the oven. Cook for 12 to 15 minutes, turning occasionally, until the chicken is golden brown and cooked through with an internal temperature of 165°F.
- Remove from heat and let rest for a couple of minutes. Garnish with chopped parsley if desired and serve hot.
Notes
- Chicken thighs yield juicier skewers; chicken breasts are leaner.
- For extra Parmesan crust, sprinkle additional cheese during the last few minutes of cooking.
- These skewers also cook well in the air fryer at 375°F for about 12 minutes, turning halfway through.
