Description

Lazy Chicken Parmesan Grilled Cheese is a quick and cheesy sandwich that brings the flavors of chicken parmesan to your table in under 20 minutes. It uses shredded chicken, marinara sauce, and melted cheeses between buttery, grilled bread.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 8 slices of Italian or sourdough bread
  • 4 tablespoons butter, softened
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  • In a small saucepan, combine shredded chicken and marinara sauce. Heat over medium heat until bubbling, about 4-5 minutes. Stir in Italian seasoning, salt, and pepper.
  • Butter one side of each of the 8 bread slices. Place four slices butter-side down.
  • On the unbuttered side of these four slices, layer with mozzarella cheese, the warm chicken mixture, Parmesan cheese, and then more mozzarella cheese.
  • Top each sandwich with the remaining bread slices, butter-side up.
  • Heat a large skillet or griddle over medium heat.
  • Place the sandwiches in the skillet and grill for 3-4 minutes per side, pressing gently, until golden brown and the cheese is melted.
  • Remove from heat, let rest for 1-2 minutes, then slice in half and serve warm.

Notes

  • Rotisserie chicken is ideal for speed, but any leftover cooked chicken works.
  • Garlic powder can be sprinkled on the buttered side of the bread before grilling for extra flavor.
  • Serve with extra marinara sauce for dipping.
  • For a crispier crust, finish the sandwiches under a broiler or in a panini press.
