- 1 package Pizza Dough (Store-bought or homemade)
- 2 tablespoons Extra Virgin Olive Oil (Select high-quality oil)
- 1/4 cup Water
- 1/4 cup Fresh Parsley (Chopped)
- 1 clove Garlic Clove (Minced)
- 1 tablespoon Lemon Zest (Zest only the yellow part)
- 2 tablespoons Lemon Juice (Freshly squeezed)
- 1 teaspoon Fine Salt
- 1/2 teaspoon Black Pepper (Adjusted to taste)
- 8 ounces Fresh Mozzarella (Sliced)
- 1/4 cup Parmesan Cheese (Grated)
- 1/2 teaspoon Chili Flakes (Optional)
Instructions
- If using fresh mozzarella, drain it and dab it with paper towels to absorb excess moisture. Prepare your pizza dough and preheat the oven to its highest setting, ideally around 475°F (245°C), for at least 30 minutes.
- In a small jar, combine extra virgin olive oil, water, lemon zest, lemon juice, chopped fresh parsley, minced garlic, fine salt, and black pepper. Shake vigorously to emulsify the brine.
- On parchment paper, press and stretch the prepared dough into a rectangle about 9×13 inches, creating dimples across the surface to hold the brine. Transfer to a pizza peel or rimmed baking sheet.
- Pour the brine evenly over the dimples of the dough and distribute fresh mozzarella pieces on top.
- Slide the pizza onto the preheated oven surface. Bake for 8-10 minutes until the crust is golden and the cheese is bubbly.
- Remove from the oven, drizzle with fresh lemon juice, sprinkle with parmesan and parsley, and add black pepper or chili flakes if desired. Slice and serve immediately.
