- 1 teaspoon cream of tartar
- 1/2 teaspoon baking soda
- 1/4 teaspoon coarse salt
- 1/2 cup sugar
- 1/2 cup vegan butter (or vegetable shortening)
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup cereal marshmallows + extra for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together flour, cream of tartar, baking soda, and coarse salt in a bowl.
- Cream vegan butter and sugar in a large mixing bowl until light and fluffy.
- Add egg and vanilla extract; beat until well incorporated.
- Fold the dry ingredients into the wet ingredients with a spatula.
- Fold in cereal marshmallows until evenly distributed.
- Scoop mounds of dough onto a prepared baking sheet and top with extra marshmallows.
- Bake for about 10-12 minutes until edges are golden.
- Cool on the baking sheet for a few minutes before transferring to a cooling rack.
